You will learn the basics of nutrition as it relates to food and menu planning. You will learn how to purchase, store and professionally prepare food in an environment that is both efficient and sanitary. Finally, you will learn supervisory skills and management techniques to handle budgets, menus and staff as deftly as you handle whisks and knives. Classes are small and instructors are easily accessible. By working in our two cooking laboratories, you will get the hands-on experience that is critical in mastering professional cooking techniques. You will also be expected to spend 400 hours working at an approved work experience within the hospitality industry. There is also an optional trip to the International Hotel / Motel and Restaurant Trade Show in New York City and a tour of the hospitality industry in Las Vegas, Nevada. Upon successful completion of this one-year certificate program, you will be qualified for entry-level positions such as: assistant chef, commercial cook and a variety of positions in commercial kitchens.
